The cassia tree is an evergreen native to southern China, widely grown across South and Southeast Asia, including India, Indonesia, Laos, Malaysia, Thailand, and Vietnam. While the tree is primarily known for its aromatic bark, which is used as a spice, its buds are also used, particularly in India, and were once popular in ancient Roman cuisine.
The tree grows 10–15 meters tall, with greyish bark and long, tough leaves that are reddish when young. Cassia bark is commonly used to flavor confectionery, desserts, pastries, and meats.
Cassia leaves contain 1–2% essential oil, with cinnamic aldehyde as the main volatile compound responsible for its distinctive aroma.
